Recipe 4: Spaghetti Squash with Mushrooms, Zucchini, and Ground Turkey Spaghetti Sauce

Spaghetti squash is a keto-friendly food. This recipe makes the most delicious spaghetti squash you will ever taste!

Ingredients:

Spaghetti Squash (1 medium sized)

Olive Oil (3 tbsp)

Salt and Pepper (just a pinch)

Ground Turkey (1 pound)

Sesame Seeds (2 tbsp)

Parmesan Cheese (1 tbsp)

Mushrooms (1/2 container)

How to make it:

  1. Preheat the oven to 400 degrees F.
  2. First you have to prep your spaghetti squash by cutting the ends off with a sharp butcher knife. Be prepared to rotate the spaghetti squash as you cut the ends off. The outside skin is tough to cut through, so make sure your knife is sharp.
  3. Next you have to cut your spaghetti squash in half from top to bottom standing up.
  4. Clean out the seeds. You can dig them out with a spoon.
  5. Put parchment paper on a baking sheet and spray it with non-stick cooking spray.
  6. Place 1 tbsp of Olive Oil on each half of the spaghetti squash. Use your hands to make sure the olive oil covers the inside of the spaghetti squash.
  7. Place the spaghetti squash halves cut side down (bottoms up) and place them in the oven for 40–60 minutes. Depending on the size of your spaghetti squash. Mine was done in 40. You can tell if it is done when the edges are golden brown and you can easily pierce the outside of the spaghetti squash with a fork.
  8. While the spaghetti squash is baking, cut up your zucchini, and place the zucchini, mushrooms, and sesame seeds in a pan with 1 tbsp of Olive Oil and a pinch of salt and pepper on medium-high heat.
  9. In another pan prepare your ground turkey or meat of choice on medium-high heat.
  10. Add a 1/2 container of sauce of your choice into your pan with the ground turkey (I use a Keto friendly spaghetti sauce)
  11. Once your spaghetti squash has finished baking, use a fork to scoop out the spaghetti like squash from the 2 halves.
  12. Just like spaghetti, use your spaghetti squash “noodles” as your base.
  13. Add your zucchini, mushroom, and sesame seed mix on top of your “noodles”.
  14. Add your meat sauce.
  15. Add parmesan cheese to top it all off.
